PASSOVER SWEET CARROT KUGEL (PARVE) |

INGREDIENTS: |
|
| |
- 3 tbs. potato flour, KP
- 8 tbs. sweet red or fortified wine
- 1 lb. carrots, grated
- 3 1/2 oz soft brown sugar, KP
- 8 tbs. fine matzah meal, KP
- 1 tsp baking powder, KP
- 1 tsp ground cinnamon
- 1 lemon, zest only
- 1 lemon, juice only
- 1 egg, beaten
- 2 oz. raisins, KP
- 2 oz dates, chopped, KP
- pinch of salt
- 3 1/2 oz margarine, melted, KP

INSTRUCTIONS: |
|
| |
- Preheat the oven to 350 degrees F.
- Dissolve the potato flour in the wine
- Then mix with the remaining ingredients and combine well
- Spoon the mixture into a greased, shallow 8" x 10 " in baking tin
and bake for one hour until crustly and amber in color
- Serve hot
