PASSOVER CHOCOLATE NUT CAKE (PARVE) |

INGREDIENTS: |
|
| |
- 9 eggs, separated
- 2 cups sugar
- 6 tbsp water
- 2 1/2 tsp grated lemon rind
- 1/4 cup lemon juice
- 3/4 cup cake meal
- 3/4 cup potato starch
- 1/2 tsp salt
- 1 1/2 cups chopped nuts
- 3/4 - 1 cup semisweet chocolate chips or grated
chocolate bar

DIRECTIONS: |

- In a large mixing bowl, beat egg yolks slightly.
- Gradually beat in sugar until the mixture is light
and fluffy.
- Add water, lemon rind and lemon juice.
- Beat thoroughly.
- Gradually add cake meal and potato starch.
- In a separate bowl, beat egg whites with salt until
stiff, but not dry.
- Fold nuts, chocolate and beaten egg whites into the
rest of the ingredients.
- Pour into an un greased 10-inch tube pan.
- Bake in a preheated 325 degrees F. oven for 1 1/2
hours or until cake springs back when touched gently.
- Invert pan and cool thoroughly before removing cake.
- Serves 16.
