PESACH WALNUT TORTE (DAIRY) |

INGREDIENTS: |
|
| |
- 12 eggs, separated
- 1 pound Passover powdered sugar, less 4 tbs for
whipped cream
- Pinch salt
- 2 tbs orange juice
- 1 pound ground nuts
- 4 tbs matzo meal
- 1 pint whipping cream
- 2 tbs Passover brandy

DIRECTIONS: |

- In a large bowl, beat egg yolks and add sugar, salt
and juice.
- In a second bowl, combine ground nuts and matzo
meal.
- Add to egg yolk mixture.
- Beat egg whites until stiff and shiny.
- Gently fold egg whites into the nut mixture.
- Pour the batter into a 10-inch springform pan that
has been well-greased and lightly dusted with matzo
meal.
- Bake in a preheated oven at 325 degrees F. for about
one hour or until a toothpick comes out dry when
inserted into torte.
- Cool on a rack.
- When torte is cool, remove side of springform pan.
Whip cream and blend in brandy and 4 tbs powdered sugar.
- Cut torte into 2 layers and spread center with cream
filling.
- Serves 8 - 10.

Variations: Any jam may be used as a filling with either
fruit or whipped cream on top. Bake a single layer in a
12-inch springform pan and frost top with whipped cream or
wine-flavored fruit. |
