PINEAPPLE-CHEESE PESACH KUGEL (DAIRY) |

INGREDIENTS: |
|
| |
- 6 eggs
- 2 cups milk
- 1 pint cottage cheese
- 3 tbs lemon juice
- 1 tbs lemon rind, grated
- 3/4 cup sugar
- dash salt
- 1 8-ounce can crushed pineapple, drained
- 6 matzos, broken, moistened and drained
- 1/4 cup oil
- 1/4 cup cinnamon sugar

Optional Topping: |

- 2 cups sour cream
- 3 tbs sugar
- 1 tbs lemon juice
|

DIRECTIONS: |
|
| |
- Beat eggs with milk and cottage cheese
- Add lemon juice, lemon rind, sugar, salt and
pineapple. Add matzo and mix again.
- Grease a 9 x 13-inch pan.
- Pour in mixture and drizzle oil on top.
- Sprinkle with cinnamon sugar.
- Bake for one hour in a preheated 350 degree oven.
Casserole may be frozen at this time)
- If desired, just before serving, top with sour cream
mixed with sugar and lemon juice.
- Heat at 450 degrees F. for 10 minutes.
- Serve 12
