PESACH STUFFED RHUBARB (MEAT) |

INGREDIENTS: |
|
| |
- 1 pound strawberry rhubarb, peeled and cut into 2
1/2 to 3-inch pieces. If rhubarb is thick, slice width
as well.

| |
Filling: |
|
| |
- 1 pound ground meat
- 1 egg
- 1/2 cup matzo meal
- Salt and pepper to taste
|
|
| |
Sauce: |
|
| |
- 1 28-ounce can tomatoes
- 1 green bell pepper
- 1/2 onion
- Salt and pepper, to taste
- 1/2 tsp. each, basil and / or oregano
- 1/4 cup sugar (or to taste)

|
| |
Coating: |
|
| |
- 1/2 cup matzo meal
- 1 or 2 eggs, beaten
- 1/2 cup oil
|
|
| |
DIRECTIONS: |
|
| |
Filling: |
|
| |
- Mix ground meat, egg, matzo meal, salt and pepper
together in bowl and set aside
|
|
| |
Sauce: |
|
| |
- Process tomatoes, bell pepper, onion, salt, pepper,
basil and oregano.
- Pour half of the sauce into baking dish.
|
|
| |
To fill Rhubarb: |
|
| |
- Take large spoonful of meat mixture and pack each
rhubarb rib.
- Press 3-4 ribs together to form roll.
- Gently squeeze to pack tightly
|
|
| |
To coat: |
|
| |
- Dip rhubarb rolls in beaten eggs and roll in matzo
meal. Brown all sides in hot oil. Turn carefully.
- Place browned rolls in baking dish and add remaining
sauce.
- Cut up any remaining pieces of rhubarb and add to
sauce.
- Depending on tartness desired, sprinkle sugar over
sauce. Bake uncovered at 350 degrees, in a pre-heated
oven.
- As sauce cooks, add sugar to taste.
Yields: 8 servings
