INGREDIENTS: |
- 1 Kosher chicken, cut in 8 pieces
- 3 tbsp olive oil
- 1 large baking potato, peeled and cut
thin lengthwise
- 1 tsp salt and pepper
- 2 cloves garlic
- 1 tsp parsley
- 1 tsp oregano
- 1 tsp rosemary
- 3 tbsp Kosher chicken stock (optional)
- ¼ cup cooking wine

DIRECTIONS: |
- In large frying pan, brown chicken in
olive oil, turning often, about 15 minutes.
- Add potato, salt, pepper, and garlic.
Simmer.
- Add parsley, oregano, rosemary, and
chicken stock. Cover, and slowly simmer, until tender, for about
1 hour.
- Serves 4
