IRIS'S DATE AND WALNUT CAKE |

INGREDIENTS: |
|
| |
8 oz. seedless dates (check for infestation)
½ tsp baking soda
¼ tsp baking powder
3 oz. white flour
2 oz. canola oil
2 oz. butter (substitute with Parve margarine)
4 oz. sugar
2 oz. chopped walnuts
2 eggs
½ tsp. vanilla extract
whipped cream for serving

INSTRUCTIONS: |

- Chop the dates
- Soak in 5 Tbs. of water and
add the baking soda.
- Allow it to stand overnight or for at least 4 hours.
- Sift the flour and the baking powder.
- Mix the oil, butter and sugar
well until light and creamy.
- Add the eggs one at a time and beat well.
- Add the vanilla extract.
- Mix the dates and walnuts together
- Add to the flour.
- Grease a baking pan and pour in the mixture.
- Bake in oven at 355º F for 45 minutes. Cool
.
- Serve with whipped cream.
CHEF'S NOTE: Can be made Parve by changing butter to margarine
And using Parve whipped cream
