NURIA GOMEZ’s TARTA DE NARANJA

INGREDIENTS: |
|
| |
· ½ cup Flour (for infestation – sift)
· 1 tsp. Baking Powder · ¼ tsp. Salt · 2 cups Walnuts, toasted, finely ground (for infestation)
· 6 Eggs, separated
· 1½ cups Sugar · 2 tsp. Vanilla “KOSHER” Syrup:
· 2 Tbs. Orange Zest (making sure no black dots – infested) · 2 cups Orange Juice · ½ cup Sugar · Powdered sugar, for dusting over the finished cake |

INSTRUCTIONS: |

1. Combine the flour, baking powder, salt and walnuts. 2. Set aside.
3. Whisk the egg yolks with half of the sugar until pale and creamy, then stir into
the walnut mixture. 4. Add the vanilla and stir.
5. Whisk the egg whites until thick and foamy.
6. Then add the remaining sugar a little at a time, whisking constantly, until
the egg whites form soft peaks.
7. Fold the egg whites into the walnut mixture.
8. Pour into a 10-inch springform pan.
9. Bake 45 to 50 minutes in a 350°F oven, or until lightly browned and firm.
10. Unmold.
11. Cool.
SYRUP:
1. Combine the orange zest, orange juice and sugar in a small
saucepan and bring to a boil.
2. Let simmer ~ 10 minutes, until the syrup is thickened.
3. Brush the syrup over the cake, until all the syrup is absorbed.
4. When cool, dust with powdered sugar.
YIELDS: 10 servings. |
