HONEY DOUGH FOR HAMANTASCHEN
Makes 30 to 36
|

Ingredients:
|
- 4 cups sifted all-purpose flour
- ½ tsp salt
- 1 tsp baking powder
- 4 eggs (graded large)
- ½ cup very soft solid white
vegetable shortening or melted vegetable shortening
- 1 cup honey, warmed
- 1 tbsp lemon juice

Directions:

Sift together the flour, salt, and baking powder. Beat the eggs
with the vegetable shortening. Beat in the honey and lemon juice. Stir
in half of the sifted dry ingredients. Add the remaining dry
ingredients to the mixture, mixing well until a dough is formed. It
may be necessary to use your hands to get a smooth working dough.
Divide the dough in half.
Preheat the oven to 350 degrees F. On a lightly floured surface,
roll out half of the dough to ¹\8-inch thickness. Cut into 3-inch
rounds. Drop a heaping teaspoon of filling in the center of each
circle. Fold up the edges of each round to form an equilateral
triangle; pinch the seams together to seal. You may leave a slight
opening in the center to expose the filling. Transfer the triangles to
lightly greased baking sheets. Bake for 12 to 15 minutes, until
lightly browned. Cool on wire racks.
