GREEK-STYLE SUMMER
BEET SALAD
|
INGREDIENTS: |
- 1 cup diced seedless cucumber
(large dice)
- 3/4 cup sliced celery
(check for infestation)
- 1/2 cup sliced radishes
- 1/3 cup thinly sliced green
onions (check for infestation)
- 1 lb. sliced beets, drained,
patted dry and cut in half
- 1/4 cup fresh lemon juice
- 1 large garlic clove, crushed
- 3/4 tsp dried oregano leaves,
crushed
- 1/8 to 1/4 tsp salt
- 1/4 tsp freshly ground black
pepper (check for infestation)
- 3 Tbs. olive oil "TERRA
AEOLICA"
- 1/2 cup crumbled feta
cheese "TYRAS-OLYMPUS"
- 1/4 cup coarsely chopped
toasted walnuts (check for infestation)

INSTRUCTIONS: |

In large bowl, combine
cucumber, celery, radishes, green onions and
beets.

In small bowl, whisk together
lemon juice, garlic, oregano, salt and pepper.

Gradually whisk in olive oil.

Pour dressing over
vegetables; mix gently.
-
Cover and chill until ready
to serve.
YIELDS: About 4 cups (serving
size 1/2 cup)
CHEF’S NOTE: Spoon salad
into serving bowl. Sprinkle with cheese and walnuts.
